Overview
A roastery with forty seats around it, at sixteen hundred metres in Alto Quiel above Boquete. Everything on the bar is grown within four kilometres of the door, including a small geisha lot the family has kept in production since 1974 and sells by the cup rather than the bag. The roaster runs on weekday mornings and the cupping table is open to walk-ins while it does, which is the cheapest way in Panama to taste four washed lots side by side without booking a tour. Food is deliberately short: eggs, a hojaldre, and whatever Teresa baked. The view down the valley is better before ten, when the cloud usually comes up.

Menú y opciones

House blend of the two washed lots, pulled short.

Honey-processed catuaí from the lower block. Heavier and sweeter than the geisha, and half the price.

Ripe plantain cake with coffee in the batter and in the glaze. Whatever is left by three is gone.

Two eggs however you want them on a fried hojaldre, with farm cheese.

The 1974 lot, washed and rested three weeks. Sold by the cup rather than the bag. Jasmine and bergamot.

Four washed lots side by side at the cupping table while the roaster runs. Weekday mornings only. 12 and over.

Cupping table is the point
Lo que destacó
The cupping table is the point. Geisha by the cup, not a bag at the airport.
